Fumonisins

Fumonisins are a group of mycotoxins produced by Fusarium species, such as F. moniliforme and F. proliferatum. Corn is the most widely affected food. Weather conditions favour fumonisin formation, where periods of drought are followed by warm, wet weather. Fumonisins have various effects on humans and animals, causing pulmonary oedema in pigs. They are suspected of influencing the formation of oesophageal cancer in humans.
