Aflatoxins Aflatoxins are a group of mycotoxins produced by mold of the Aspergillus species, such as A. flavus or A. parasiticus. B1, B2, G1 and G2 and the hydroxylated metabolite M1 are the main types here, with aflatoxin B1 occurring most frequently. Aflatoxins can be found in a wide range of foods including cereals, nuts, spices, figs and dried fruits. Aflatoxin M1, the metabolite of Aflatoxin B1, is found in milk and dairy products. Aflatoxins are of major interest because they are carcinogenic and predominantly affect the liver. Levels of contamination in the diet must therefore be consistently monitored, such as not to prevent health risks. Most countries have introduced regulatory limits for these dangerous mold. These acts often include detailed sampling procedures which can cause serious problems in particular with aflatoxins.
